Today, different varieties of eggplant are sold in stores and markets. They are all prepared the same way, but they taste different. For example, white eggplant, shaped like eggs, is native to Africa, they are the most bland, but not bitter. Yellow eggplant – from southern China, also egg-shaped, but they have more carotene, and the taste is more familiar to us. But the purple "eggs" that are so popular in the Mediterranean (and which are mistakenly considered Chinese there) differ from ordinary eggplants only in shape.
